I love to make Sweet Potato Waffles when I have left over sweet potato. I especially like it with lots of Kerrygold butter and a drizzle of organic maple syrup. I pretty much find that anything is my favorite as long as it has some Kerrygold butter on it. This recipe is a great way to add some flavor and moisture to a paleo waffle recipe. Enjoy!

Ingredients
- 4 eggs
- 1/2 cup full fat coconut milk
- 1 cup sweet potato, mashed
- 2 tbs coconut oil or butter
- 1/4 cup coconut flour
- 1/2 tsp baking soda
- 1/4 tsp sea salt
- 1/2 tsp cinnamon
Options for Toppings
- blueberries
- strawberries
- bacon
- chocolate chips
Instructions
- Preheat waffle maker.
- Combine eggs, coconut milk, sweet potato and coconut oil in a blender until mixed well.
- Add coconut flour, baking soda, salt and cinnamon. Blend again until smooth.
- Brush waffle iron with ghee or coconut oil. Cook on medium-low setting but every waffle maker is different so watch the temperature and time.
- Serve immediately with toppings of choice. My favorites are butter and maple syrup.
