Paleo Sweet Potato Waffles

Sweet Potato Waffle

I love to make Sweet Potato Waffles when I have left over sweet potato. I especially like it with lots of Kerrygold butter and a drizzle of organic maple syrup. I pretty much find that anything is my favorite as long as it has some Kerrygold butter on it. This recipe is a great way to add some flavor and moisture to a paleo waffle recipe. Enjoy!

Ingredients
  1. 4 eggs
  2. 1/2 cup full fat coconut milk
  3. 1 cup sweet potato, mashed
  4. 2 tbs coconut oil or butter
  5. 1/4 cup coconut flour
  6. 1/2 tsp baking soda
  7. 1/4 tsp sea salt
  8. 1/2 tsp cinnamon
Options for Toppings
  1. blueberries
  2. strawberries
  3. bacon
  4. chocolate chips
Instructions
  1. Preheat waffle maker.
  2. Combine eggs, coconut milk, sweet potato and coconut oil in a blender until mixed well.
  3. Add coconut flour, baking soda, salt and cinnamon. Blend again until smooth.
  4. Brush waffle iron with ghee or coconut oil. Cook on medium-low setting but every waffle maker is different so watch the temperature and time.
  5. Serve immediately with toppings of choice. My favorites are butter and maple syrup.
