
Pan Fried Fish

Though I adore my husband's Baked Pesto Fish (see recipe), my absolute favorite way to eat any fish is pan fried. He will tell me that only certain fish is meant to be cooked in this way, but I can't help myself, it's the method that I know will guarantee that I will enjoy every bite!

Ingredients
- 2 fillets of fish, thawed
- Salt and pepper to taste
- 2 teaspoon green herbs (I like Penzey's "Sunny Paris" blend of shallots, chives, dill, basil and more)
- 2 tablespoon ghee or butter
Instructions
- Season each fish fillet with salt, pepper and herbs to taste.
- Melt ghee or butter in a cast iron skillet over medium heat.
- Wait until skillet is hot, then cook the fillets until golden brown on one side.
- Flip fillets and cook until golden brown on the other side.
- They should be just cooked, still nice and flaky.
- Remove from skillet and serve hot with your favorite vegetables!
