Here is my recipe for the most amazing Summer Kale Salad you have ever had. It is sweet, tangy and refreshing, you could even make it to get your kids to finally eat kale. Now, I know you may think that I am someone who loves kale but honestly it isn’t my favorite. However, I do like it in this recipe! If you don’t usually like kale but are trying to get more greens and antioxidants in your diet then I recommend trying this recipe because I think you will love it just as much as I do!
Summer Kale Salad

Delicious and refreshing kale salad that will be enjoyed by everyone!

Ingredients
- 1 bunch of kale
- 1 apple
- 1/2 cup blueberries
- 1-2 tbs honey
- 1 tbs apple cider vinegar
- 1 tbs olive oil
- pinch of salt
Instructions
- Rinse, cut and chop kale leaves into small bite sized pieces
- Rinse and chop up the apple in small bite sized pieces
- Put the chopped kale, apple and blueberries in a bowl
- Mix honey, apple cider vinegar, olive oil and pinch of salt and drizzle all over the kale mixture
- Lightly toss all ingredients and let sit for 30 minutes in the fridge or serve immediately if you want more of a crunch

- Stores well in Tupperware and lasts about 3 days
