Something I miss since taking out dairy from my diet is whipped cream but thankfully there is a pretty tasty alternative. You need to know somewhat in advance if you want to make this because the can of coconut milk has to be in the fridge for 24 hours. You can do what I do and just keep a can of full fat coconut milk in the fridge and then you will always be able to make this on demand. Thank goodness for Coconut Milk! I use this on top of sorbet or ice-cream or on top of fresh organic berries.

Dairy-free alternative to whipped cream and cool whip
Ingredients
- • 1 (14 ounce) can Full Fat Coconut Milk chilled in the fridge for 24 hours
- • 1 tablespoon (or more to taste) coconut sugar, maple syrup or honey
Instructions
- Scoop the cold coconut cream into a small bowl, leaving any excess coconut water in the can.
- Whip with a hand mixer until you get a nice fluffy whipped cream.
- You can serve the whipped coconut cream immediately, or transfer to an airtight container in the fridge for up to 1 week. It will harden up in the fridge. Just whisk for a few seconds before serving.
