Vanilla Cupcakes

These are my all time FAVORITE cupcakes. They are grain-free as well as being super moist and light, which I feel like is always the main problem when trying to make Paleo Cupcakes. You must try these for your next party or Birthday, you will not be disappointed. You can top these with coconut whip cream and fruit or some Buttercream Frosting which I have posted about too. Just search for Dairy-Free Buttercream Frosting, there is some organic powdered sugar in the recipe and I am sure that’s what makes it taste so good!

A grain-free alternative for a traditional vanilla cupcake

Ingredients
  1. • ¼ cup coconut flour
  2. • ⅛ teaspoon sea salt
  3. • ⅛ teaspoon baking soda
  4. • 3 large eggs
  5. • ¼ cup palm shortening
  6. • 2 tablespoons honey (can use maple syrup)
  7. • 1 tablespoon vanilla extract
Instructions
  1. In a food processor, combine coconut flour, salt and baking soda
  2. Pulse in eggs, shortening, honey and vanilla
  3. Line a cupcake pan with 6 paper liners and scoop ¼ cup into each
  4. Bake at 350° for 20-24 minutes
  5. Cool for 1 hour
  6. Frost with Paleo Frosting or top with coconut whipped cream and berries
