Dark Chocolate Sunflower Butter Bites

Ingredients
- 1 cup sunflower seed butter (or other nut butter)
- 1 tablespoon maple syrup (or honey)
- 1 teaspoon vanilla
- 2 cups dark chocolate chips
- 24 pack of mini muffin liners
- 1 mini muffin pan (can use regular muffin pan but it would just make large nut butter cups)
Instructions
- In a bowl, stir together sunflower seed butter, vanilla, sweetener of choice and salt. If you use another nut butter that is thicker, add 2 tbs of coconut oil to thin out the mixture.
- In a small saucepan over low heat, melt the dark chocolate chips. Once melted remove from heat.
- Place mini muffin liners in the mini muffin pan. Then, using a small spoon, coat the bottom and sides of the liners with the melted dark chocolate.
- Place in freezer for 10 minutes so the chocolate can harden.
- Scoop a large teaspoon of the sunflower seed butter mixture into each liner, then spoon the melted dark chocolate over the nut butter until covered completely.
- Place the pan in the freezer for 10 minutes or until hardened.
- Pop the nut butter cups out of mini muffin pan and then remove the mini liners or leave them on to serve.
- If there is anything left over then repeat steps using the rest of the nut butter mixture and melted dark chocolate.
