Sometimes on the weekend I like to just throw whatever I have in my fridge in a pan, add some eggs and bam make a breakfast scramble. I am basically throwing in everything but the kitchen sink and some how no matter what is in the fridge it always turns out great. I made a recipe but it can really be whatever you want or whatever is in your fridge.
Kitchen Sink Breakfast Scramble

Serves 4
Throw in everything but the kitchen sink and add eggs for an easy breakfast scramble
Ingredients
- • 2 cloves Garlic, minced
- • 1 Yellow Onion, quartered and sliced
- • 1 Zucchini, quartered and sliced
- • ½ Red Bell Pepper or Roasted Red Pepper, sliced OR vegetables you have in your fridge
- • Breakfast sausage, bacon, chicken, beef OR meat you have in your fridge
- • Sea Salt, to taste
- • 2 cups fresh Spinach, chopped
- • 1 Tbsp fat of choice
- • 12 large Eggs, whisked
- • 1 Avocado, sliced
Instructions
- Heat 1 tablespoon of fat in a large cast iron skillet over medium heat.
- Add minced garlic and sauté for about 1 minute and then add the onions. Continue sautéing the onions and garlic until the onions are translucent.
- Add the zucchini and bell peppers (if using fresh) to the onions and garlic and sauté until they are tender. Remove the veggies to a bowl and set aside. If the veggies are already cooked and from your fridge then heat them up and then set them in a bowl and set aside.
- In the same skillet, add left over meat from the fridge or any other meat of choice. Season with salt and cayenne pepper and cook until heated or cooked.
- Remove the meat to the same bowl as the veggies.
- In the same skillet, use the remaining fat in the skillet or add 1 tsp of fat. Add spinach and sauté until wilted.
- Add the eggs to the spinach in the skillet and season with salt. Cook and scramble until almost done. Add in the meat and veggies and continue cooking until the eggs are done.
- Serve in bowls and top with sliced avocado.
