I love to make these on Sunday for the week and then I just eat a couple in the morning on my way out the door. They are easy to make and taste really great. These are full of protein and good healthy fat. They make it easy to start your day off right with balanced blood sugar and don’t give you a sugar crash afterwards. Paleo Savory Breakfast Muffins

Savory breakfast muffin full of protein and healthy fat
Ingredients
- 9 large eggs
- 8 ounces ground breakfast sausage
- 1 red, green, and/or yellow pepper
- 1/2 cup frozen spinach, chopped
- 1/2 cup onions, chopped
- 1/4 teaspoon pepper
Instructions
- Preheat oven to 350 degrees, spray a muffin tin with non-sticking coconut oil cooking spray or use coconut oil. Set aside.
- Brown the ground sausage in a medium-sized pan over medium-heat.
- In a large mixing bowl, whisk the eggs and then add in the sausage, peppers, onion, spinach and pepper. Pour the batter into the muffin tins, filling ¾ of the way. Bake for 20-25 minutes.
