Paleo Plantain Chip Nachos

Hey guys!

I wanted to post my favorite nachos recipe. Sometimes once you switch to Paleo you just want an old favorite and for me that was Nachos. All I really had to change was the chips, so this was a super easy recipe to convert. You take out the corn chips and use plantain chips instead. I recommend Inka Chips and they also offer a spicy version if you really want an extra kick.

Serves 2

Ingredients
  1. 1 pound of ground grass-fed beef
  2. 1/2 teaspoon of cumin
  3. 1/2 teaspoon of chili powder
  4. 1/2 teaspoon of paprika
  5. 1/2 teaspoon of garlic powder
  6. 1/2 teaspoon of onion powder
  7. dash of sea salt
  8. dash of pepper
  9. 4 cups of plantain chips(can substitute corn chips)
  10. 1 jalapeno, chopped
  11. 1 tomato diced
  12. 1/4 of a white onion, diced
  13. 1 tablespoon salsa
  14. black olives
Instructions
  1. In a large pan cook the grass-fed beef over medium-high heat. While the meat is cooking add the 1/2 teaspoon of cumin, chili powder, paprika, garlic powder, onion powder, salt and pepper. Continue to crumble the meat until the meat is evenly browned, add more spices as needed to personal preference.
  2. On a large plate lay out your plantain chips and top with your meat. Continue garnishing with guacamole, tomatoes, onions, salsa, black olives, jalapenos or anything else you like.
