This an easy go to meal at our house. It’s easy and it doesn’t take very long and it is great for left over lunches. You can also make this on Sunday and then use it for leftovers for all week which is what I do on a regular basis. You can use whatever ground meat you want turkey, bison, beef or venison.
Ground Beef and Sweet Potato Hash

An easy to make hash for any occasion
Ingredients
- • 3 pounds ground beef
- • 1/2 a large red onion
- • 3 cups peeled & cubed sweet potatoes
- • 1 tablespoon minced garlic
- • 2 teaspoons ground cumin
- • 2 teaspoons dried parsley
- • 1 teaspoon sea salt
- • 1/2 teaspoon pepper
- • 2 cups chopped spinach
- • 1 cup vegetable(brussel sprouts, broccoli, zucchini or asparagus)
Instructions
- In a large frying pan, over medium heat, brown ground beef with chopped red onions until cooked through.
- Stir in salt, pepper, cumin, and parsley. Add sweet potatoes, vegetable of choice and minced garlic and continue cooking until the sweet potatoes and vegetable are softened (about 10-15 minutes).
- Add in chopped spinach and cook until the spinach is wilted (5 minutes longer).
