This recipe is such an easy and traditional dish that everyone loves, even your meat and potato friends, since it really is meat and potatoes! Luckily its already pretty much paleo as long as you are pro white potato but you could always switch them out for sweet potatoes. This is something my mom made all the time when I grew and it is still a recipe I use today.
Slow Cooker Pot Roast

Serves 6
Ingredients
- 1 cup water
- 2 1/2 pound beef roast (chuck or shoulder)
- Sea salt and Pepper
- 8 small red potatoes cut in half
- 6 medium carrots, peeled and chopped in quarters
- 2 garlic cloves, minced
- 1 medium onion, sliced in quarters
Instructions
- Pour the water into the bottom of the slow cooker and turn onto low. Season the roast generously with sea salt and ground black pepper. Place the roast in the slow cooker.
- Place the carrots and onions around the edge of the roast and place the chopped garlic on top of the roast. Cover and allow the roast to cook on low for 6-8 hours or until the meat is tender.
- Remove the roast and vegetables from the slow cooker and place on a platter. Pour some of the remaining cooking liquid over the meat and serve.
