Simple Buttercream Frosting

The PERFECT frosting topping to any cupcake but I love to pair it with my grain free vanilla cupcakes. This icing is not necessarily paleo because it does have organic powdered sugar but sometimes you just have to use some sugar…its not like I eat this everyday, even though I may want to! Enjoy.

    Ingredients
    1. 1 cup Unsalted Grass Fed Butter
    2. 1 tsp Pure Vanilla Extract
    3. 3 Tbsp Organic Coconut Cream (the cream is at the top of a full fat can of coconut milk)
    4. 2 cups Organic Powdered Sugar, sifted
    Instructions
    1. Whip softened grass fed butter in the bowl of your standing mixer. Use the beater attachment and whip the butter for 5 minutes. You can also use a hand mixer.
    2. Add the vanilla extract and heavy coconut cream, then whip until mixed well.
    3. Add the powdered sugar, in small amounts, whip until it is nice and fluffy and looks like icing.
    4. You can use the icing like this or add natural food coloring or cocoa powder.
    5. Use right away, or store in refrigerator until next use.
