Refreshing Chicken Salad

Here is a simple and refreshing recipe for a classic chicken salad. I love to make this for road trips so I have something I can snack on. It keeps really well in a cooler but I usually have to make multiple batches otherwise it doesn’t last us very long on our road trip. Great with veggies or plantain chips. I like to use Primal Mayo when I don’t have time to make my own mayonnaise. Primal Mayo is a pre-made mayo that uses avocado oil and cage free eggs.

Ingredients
  1. • 1/2 whole cooked chicken
  2. • 1 cup grapes, halved
  3. • 1/2 cup apple, peeled and chopped
  4. • ½ cup onion, chopped
  5. • 2-3 stalks celery, chopped
  6. • 3/4 – 1 cup Paleo Mayo, Primal mayo, Just Mayo or Sir Kensington Mayo
  7. • 1/2 – 1 tsp sea salt and pepper
  8. • 1/2 – 1 Tbsp lemon juice (optional)
Instructions
  1. You can buy a rotisserie chicken or throw a chicken in the crockpot, sprinkle it with salt & pepper and let it cook for about 4-6 hours on low.   After the chicken is cooked and cooled, de-bone and shred all the meat and put 1/2 in a large mixing bowl.
  2. Slice up your grapes, peel your apple, then chop your apple, onions and celery.
  3. Combine all of these ingredients in the bowl with your chicken and then start adding the mayo.
  4. Add the Seasoning, salt and pepper, and lemon juice.  Stir well to combine.
