Here is a simple and refreshing recipe for a classic chicken salad. I love to make this for road trips so I have something I can snack on. It keeps really well in a cooler but I usually have to make multiple batches otherwise it doesn’t last us very long on our road trip. Great with veggies or plantain chips. I like to use Primal Mayo when I don’t have time to make my own mayonnaise. Primal Mayo is a pre-made mayo that uses avocado oil and cage free eggs.

Simple and easy chicken salad and great for road trips
Ingredients
- • 1/2 whole cooked chicken
- • 1 cup grapes, halved
- • 1/2 cup apple, peeled and chopped
- • ½ cup onion, chopped
- • 2-3 stalks celery, chopped
- • 3/4 – 1 cup Paleo Mayo, Primal mayo, Just Mayo or Sir Kensington Mayo
- • 1/2 – 1 tsp sea salt and pepper
- • 1/2 – 1 Tbsp lemon juice (optional)
Instructions
- You can buy a rotisserie chicken or throw a chicken in the crockpot, sprinkle it with salt & pepper and let it cook for about 4-6 hours on low. After the chicken is cooked and cooled, de-bone and shred all the meat and put 1/2 in a large mixing bowl.
- Slice up your grapes, peel your apple, then chop your apple, onions and celery.
- Combine all of these ingredients in the bowl with your chicken and then start adding the mayo.
- Add the Seasoning, salt and pepper, and lemon juice. Stir well to combine.
