I love roasted root vegetables! If I could have them every day I would but I unfortunately do not always have the time to cut up all the vegetables. This a great recipe to use when you want to make a good impression and don’t mind spending a little time in the kitchen. This recipe has some maple syrup in it so it give the roasted vegetables a nice sweet flavor.
Maple Glazed Root Vegetables

Anything with Maple Syrup has to be good...right?
Ingredients
- • 1 small butternut squash, peeled, seeded, and diced or 1 large sweet potato
- • 2 beets, peeled and diced
- • 2 carrots, peeled and diced
- • 2 parsnips, peeled and diced
- • Coconut oil, for drizzling
- • Salt, to taste
- • 1/4 cup maple syrup
- • 1 tbsp ghee or butter
- • 1/2 tsp cinnamon
- • Pinch of ground nutmeg
Instructions
- Preheat the oven to 400 degrees F.
- Place the diced vegetables on a baking sheet and drizzle with coconut oil, toss to ensure even coat of oil on vegetables.
- Sprinkle with salt and roast for 30-35 minutes.
- Turn twice and cook until tender.
- Place the maple syrup, ghee, and cinnamon in a small saucepan. Bring to a simmer and then remove from heat.
- Pour over the roasted vegetables and toss to coat. Serve warm.
