Maple Glazed Root Vegetables

I love roasted root vegetables! If I could have them every day I would but I unfortunately do not always have the time to cut up all the vegetables. This a great recipe to use when you want to make a good impression and don’t mind spending a little time in the kitchen. This recipe has some maple syrup in it so it give the roasted vegetables a nice sweet flavor.

Serves 4

Ingredients
  1. • 1 small butternut squash, peeled, seeded, and diced or 1 large sweet potato
  2. • 2 beets, peeled and diced
  3. • 2 carrots, peeled and diced
  4. • 2 parsnips, peeled and diced
  5. • Coconut oil, for drizzling
  6. • Salt, to taste
  7. • 1/4 cup maple syrup
  8. • 1 tbsp ghee or butter
  9. • 1/2 tsp cinnamon
  10. • Pinch of ground nutmeg
Instructions
  1. Preheat the oven to 400 degrees F.
  2. Place the diced vegetables on a baking sheet and drizzle with coconut oil, toss to ensure even coat of oil on vegetables.
  3. Sprinkle with salt and roast for 30-35 minutes.
  4. Turn twice and cook until tender.
  5. Place the maple syrup, ghee, and cinnamon in a small saucepan. Bring to a simmer and then remove from heat.
  6. Pour over the roasted vegetables and toss to coat. Serve warm.
